Every cleaning visit starts with a system inspection. Before we begin degreasing, we check the hood, duct connections, and exhaust fan for anything that would affect the quality of the clean or indicate a mechanical problem that needs attention before the next scheduled service.
All work surfaces in the kitchen are protected with drop covers before we start. Degreaser is applied to all accessible surfaces inside the hood canopy, the grease collection trough, the duct interior as far as accessible from the hood, and the exhaust fan housing and blades on the rooftop. Collected grease is removed and disposed of properly — it does not go down your drains.
At the end of every visit you receive a printed service report listing the date, technician name, areas cleaned, and any deficiencies observed. That report is your documentation for fire marshal inspections, insurance renewals, and health department records. We keep a copy on file as well.
NFPA 96 sets cleaning frequency based on the type and volume of cooking. The NJ Division of Fire Safety enforces these requirements locally. Here is a general guide — your fire marshal has final authority for your specific location.
